Foodies, meet Tang Huan: China’s answer to India’s much-loved Jalebi |

Most of us grow up thinking jalebi is exclusively ours – a purely Indian street food staple that you grab hot off a kadhai on a Sunday morning. But food history has a funny way of surprising people. China actually has its own ancient sweet that looks almost like a twin to our golden spirals. They call it tang huan, or Chinese sugar rings, and if you saw a picture of them side-by-side, you’d easily do a double take. The whole connection blew up on social media after Yu Jing, who speaks for the Chinese Embassy in India, posted photos of both treats on X. She put them together with a simple caption: “From China’s sugar ring to India’s jalebi, the spirals of deliciousness bring crunch to every bite.”Naturally, people who love their sweets couldn’t get enough of it.

The internet weighs in

It didn’t take long for the post to get people talking across social feeds:One person who had even studied Mandarin mentioned they’d never run into this dessert connection before, adding that tang huan went straight to the top of their must-try list.Another curious commenter wanted to know how the eating experience actually stacks up, asking, “So there is a Chinese version of Jalebi! What is the difference in it?”A third user summed up the whole vibe nicely: “Food culture connects people.”It really is something. Two totally different parts of the world, centuries apart, settling on the exact same idea of piping batter into hot oil to make crispy, sugary coils.

What makes Tang Huan tick?

Tang huan literally translates to “sugar ring.” It’s a light, paper-thin fried treat that turns pale golden and shatters when you bite into it. Just like jalebi, it has that airy crunch that makes it way too easy to finish off a whole plate before you realize what happened. The cultural backdrop, though, couldn’t be more different.Over in China, making sugar rings is a cozy family affair tied to Chinese New Year. Families sit around to fry them up together, and there’s even a quirky old superstition attached to the whole process. Supposedly, if anyone argues or says nasty things in the kitchen while the rings are frying, those bad vibes get trapped inside the batter, bringing terrible luck for the year ahead. There’s also a major dietary difference to keep in mind: Indian jalebi is almost always vegetarian, but traditional Chinese sugar rings use plenty of eggs.

Different kitchens, different methods

Once you look under the hood, the recipes branch off completely. To make tang huan, cooks mix whisked eggs with water, bread flour, cake flour, cornflour, custard powder, and sugar until it forms a slick, velvety batter. Then comes the trick: they heat up intricate brass or metal moulds in hot oil, dip them into the batter, and drop them back into the oil. The batter crisps up fast, slips off the metal, and dries into a light, crunchy flower-like ring. Our jalebi takes a totally different route. The batter uses all-purpose flour (maida), yoghurt, a touch of besan, and lemon juice, which gets left out to ferment overnight. That overnight wait is what gives jalebi its distinct, sharp tang. Instead of metal forms, halwais squeeze the batter out of a cloth bag directly into flat pans of sizzling oil, swirling the coils freehand. And then comes the biggest difference of all: syrup. As soon as jalebis come out of the oil, they get plunged into a warm, sticky chashni perfumed with cardamom and saffron. When you bite into a jalebi, it gushes syrup. When you bite into a Chinese sugar ring, it snaps clean like a cookie. At the end of the day, tang huan gets its crisp shape from metal moulds and egg batter, while jalebi gets its personality from fermented dough and a deep soak in spiced syrup.Yet put them next to each other on a plate, and you can’t help but smile. Turns out, human beings everywhere share the exact same weakness for fried, twisted sugar.
